Stage One: Freezing

Stage Two: Primary Drying (Sublimation)

Stage Three: Secondary Drying
Finally, the temperature is raised a little more to drive off the small amount of water that is still chemically clinging to the food after sublimation. This secondary drying stage, also called desorption, brings the moisture content down low enough for long-term storage. When it is done, the food is dry, lightweight, and stable at room temperature.
